where Chef Olguin learned the techniques, nuances and art of French, Italian and Classic American cuisines.  

2006

Chef Olguin decided it was time to take on NYC.  Here he has had the opportunity to work alongside some of the city’s premier chefs such as Chef Ed Brown, Chef David Waltuck, Chef Alain Ducass, Chef Rafalle Ronca and Chef Arturo Mcleod.

 

2013 

Chef Olguin accepted the position of Executive Chef at Black Swan. 

There he earned Michelin Star recommendations 2013, 2014, 2015 and 2016, 2017. 

 

2014

His mac n cheese was named Top 8 in NYC by Gothamist magazine.

 

2015

He continued to make his mark in NYC earning Top 10 late night food and Top 10 best comfort food in Brooklyn by Brooklyn Magazine.

Recent Years

Chef Olguin has started a Chef Consulting business in Brooklyn to help the forgotten restaurants to be able to succeed.

One restaurant that has been recently helped was Neirs Tavern which was about to close, tripled food sales in two weeks by incorporating Brunch which was sought after for so many years but never implemented.
